Zesty potato salad
Ingredients/Components
- sour cream - 1/2 c
- salt - 1/2 tsp
- pepper - 1/2 tsp
- prepared horseradish - 2 Tbsp
- green onions, sliced - 2 item
- mayonnaise - 1/2 c
- hard-cooked eggs, chopped - 4 item
- red potatoes - 2 lb
- bacon strips, cooked and crumbled - 3 item
- chopped, fresh parsley - 1 Tbsp
How to make zesty potato salad:
Peel potatoes; cook in boiling, salted water for 20 minutes or until done. Cut potatoes into cubes. In a large bowl, combine mayonnaise, sour cream, horseradish, parsley, salt and pepper; mix until smooth. Stir in potatoes, bacon, eggs and onions. Cover and chill up to 24 hours.
