Zesty potato salad

Ingredients/Components

• sour cream - 2 Tbsp
• vinegar - 1 tsp
• Dijon mustard - 1 2
• salt and pepper to taste - 1 item
• mayonnaise
• bunch green onions with tops, chopped - 1 item
• medium unpeeled red potatoes - 4 item
• bottled Ranch dressing - 2 Tbsp
• hot paprika optional - 1 item

How to make zesty potato salad:

Dressing:2 Tbsp. mayonnaise2 Tbsp. sour cream2 Tbsp. bottled Ranch dressing1 to 2 Tbsp. Dijon mustard1 tsp. vinegar hot paprika (optional) Place potatoes in a saucepan; cover with water. Boil 20 to 25 minutes. Drain and cool. Cut potatoes into cubes and place in a salad bowl. Add green onions, salt and pepper.

For dressing, combine mayo, sour cream, Ranch dressing, mustard and vinegar. Pour over potatoes and mix well. Chill 1 hour before serving. Sprinkle with paprika. Makes 4 servings.
