  • sugar - 2 c
  • eggs - 2 item
  • chopped pecans - 1 c
  • vanilla extract - 1/2 tsp
  • stick margarine - 1 item
  • flaked coconut - 1 c
  • baking powder
  • all-purpose flour - 2 c
  • lemon extract - 1/2 tsp
  • can evaporated milk - 1 1/3
  • crushed pineapple, drained - 1 c
  • crushed pineapple undrained - 2 c
  • Stir in pineapple

How to make yum yum cake:

Beat eggs and sugar together until light and fluffy. Stir in pineapple. Add flour that has been sifted with baking powder. Mix well. Spread into a greased and floured 13 x 9 x 2-inch pan. Bake at 350° for 25 or 30 minutes, or until cake tests done. Add topping.Topping:1 c. sugar1 stick margarine1 c. flaked coconut1 c. chopped pecans1 (15 1/3 oz.) can evaporated milk1/2 tsp. vanilla extract1/2 tsp. lemon extract1 c. crushed pineapple, drained Put sugar, margarine and milk in saucepan. Boil for 3 minutes. Remove from heat. Add coconut, pecans, pineapple and extracts. Spread over hot cake.
