Ingredients/Components

  • butter - 1/4 c
  • carton sour cream - 1 oz
  • salt and pepper to taste - 1 item
  • onion, chopped - 1 item
  • carrots, grated - 2 item
  • seasoned bread crumbs
  • yellow squash, sliced - 2 lb
  • can undiluted cream of chicken soup - 1 item
  • small jar diced pimientos, drained - 1 item

How to make yellow squash casserole:

Cook squash in small amount of water until tender; drain well and mash. Add salt and pepper.

Combine soup, pimiento, carrots, onion, sour cream and butter, blending well; gently stir in squash. Alternate layers of squash mixture and breadcrumbs in a greased 2-quart casserole. Bake at 350° for 30 minutes or until bubbly. Yields 6 to 8 servings.
