Ingredients/Components

  • sugar - 1 Tbsp
  • salt - 3/4 tsp
  • flour - 2 c
  • butter - 1/4 c
  • egg, beaten - 1 item
  • yeast - 1 pkg
  • milk, scalded - 3/4 c

How to make yeast muffins:

Mix salt, sugar and yeast in 1 cup flour. Melt butter in scalded milk. Add to flour mixture and beat well. Add beaten egg. Mix well. Add remaining flour and let rise in warm place 1 hour. Stir down and spoon into greased muffin tins. Let rise 1 hour. Bake at 375° until browned. Yields 12 muffins.
