- water
- bay leaf - 1 item
- carrots - 6 item
- potatoes - 6 item
- cloves garlic - 2 item
- chopped parsley
- chuck roast
- whole thyme leaves
- salt pork diced
- medium onions yellow - 6 item
- turnip 1/2-inch diced slices - 1 item
How to make yankee pot roast:
Heat a large Dutch oven and brown salt pork - leave fat in the pan. Salt and pepper roast and brown in fat - both sides (do not puncture meat). Add 2 cups of water, bay leaf, garlic, thyme and parsley. Cover - simmer slowly 2 hours - Keep at least 1 cup of water. Add carrots, onion and turnip. Cover and cook 1/2 hr. Then add potatoes and cook until potatoes are done. Watch water (don't let pan get dry). Take out meat and vegetables. Add small amount of water if needed. For roux melt butter, add flour in the pan and mix to desired thickness for gravy.Recipe categories: Vegetables, Main dish, Beef.
