Ingredients/Components
- wild ducks, dressed - 2 item
- soft bread crumbs - 4 c
- celery, minced - 1 c
- onion, minced - 1 c
- raisins - 1 c
- pecan meats, chopped - 1 c
- salt - 1/2 tsp
- milk, scalded - 1/2 c
- eggs, beaten - 2 item
- slices bacon - 6 item
- catsup - 1 c
- Worcestershire - 1/4 c
- A - 1/4 c
- chili sauce - 1/2 c
- Add milk to eggs and add this to the mixture
How to make wild duck with pecan stuffing:
Fill ducks with a stuffing prepared by mixing breadcrumbs, celery, onion, raisins, nuts and salt. Add milk to eggs and add this to the mixture. Place stuffed ducks in a roasting pan and cover with bacon strips. Roast, uncovered, at 350° for 20 minutes per pound. Baste ducks with a sauce prepared by combining last 4 ingredients.
