Ingredients/Components
- currant jelly - 1/2 c
- catsup - 1/2 c
- prepared mustard - 2 Tbsp
- salt and pepper - 1 item
- Burgundy wine - 1/2 c
- small onion - 1/4 item
- sherry - 1/2 c
- celery leaves - 1 item
- medium apple - 1/4 item
- small piece salt pork - 1 item
- small link pork sausage not smoked - 1 item
- Stuff with apple, onion, sausage with casing removed and celery leaves
How to make wild duck:
Salt and pepper duck. Stuff with apple, onion, sausage (with casing removed) and celery leaves. Add a little wine to the cavity. Place in an iron pot. Pour over rest of wine. Place salt pork on breast of duck. Cover. Roast at 325° for about 3 hours. Serve with orange sauce.Orange Sauce for Wild Duck:1/2 (6 oz.) can frozen orange juice1/2 c. catsup1/2 c. sherry1/2 c. currant jelly2 Tbsp. prepared mustard Beat together (or use blender) until smooth.
