Whole wheat bread
Ingredients/Components
- eggs - 2 item
- salt - 1 Tbsp
- cooking oil - 1/4 c
- honey - 1/2 c
- yeast - 2 pkg
- wheat germ optional - 1/3 1/2
- milk** - 2 c
- wheat flour blend* - 6 7
- cracked wheat optional - 1/3 1/2
How to make whole wheat bread:
*Half whole wheat and unbleached white flours.**Evaporated skim milk and water are a good mix.
In large mixing bowl, mix 2 cups flour, salt and yeast. In saucepan, heat milk, honey and oil over low heat until warm. Add eggs and warm liquid to flour. Beat 1/2 minute at low speed. By hand gradually stir in 4 to 5 cups flour to form a soft dough. Knead on floured surface until smooth and elastic, about 1 minute.
Cover dough; let rise in warm place until light and doubled in size, 70 to 80 minutes. Punch down dough. Divide in half. Shape into loaves and place in 2 (9 x 5-inch) greased loaf pans. Cover and let rise 45 to 60 minutes until light.
Bake at 350° for 40 minutes or until loaf sounds hollow when tapped. Remove from pans immediately. Cool on rack before slicing.
