Whole grain buttermilk pancakes
Ingredients/Components
- salt - 1/4 tsp
- brown sugar - 1 Tbsp
- eggs, separated - 2 item
- buttermilk - 1 c
- baking powder
- cornmeal - 1 Tbsp
- oat bran - 1/4 c
- whole wheat flour - 2/3 c
- corn oil - 2 Tbsp
- nonstick cooking spray - 1 item
How to make whole grain buttermilk pancakes:
In a medium bowl combine flour, oat bran, cornmeal, sugar, baking powder, soda and salt. Combine buttermilk, egg yolks and oil. In a clean large bowl, beat egg whites with mixer on high speed until they form stiff peaks. Combine buttermilk mixture with the flour mixture. Fold in egg whites.Lightly coat a 12-inch skillet with cooking spray. When skillet is hot, cook pancakes 4 at a time, using 1/4 cup butter for each. Cook about 2 minutes on one side until bubbly; cook 2 minutes longer on other side until golden brown and cooked through. Makes 12 pancakes.
