White fruit cake



  • sugar
  • eggs - 6 item
  • vanilla - 1 Tbsp
  • butter - 1/2 lb
  • baking powder - 2/3 tsp
  • nuts - 1 qt
  • plain flour
  • candied cherries - 1 lb
  • candied pineapple - 1 lb
  • coconut, grated or frozen equivalent - 1 c

How to make white fruit cake:

Reserve 1/2 cup flour to put on fruit, coconut and nuts. Cream butter and sugar. Add eggs, one at a time, beating thoroughly. Sift flour and baking powder together; add to mixture. Combine floured fruit and nuts with batter and pour into large tube pan that has been well-greased (I always line bottom with wax paper). Bake at 300° for about 2 hours.
