White chili
Ingredients/Components
- salt - 1/4 tsp
- water - 1 c
- ground cloves - 1/8 tsp
- dried whole oregano - 3/4 tsp
- clove garlic, minced - 1 item
- ground red pepper - 1/4 tsp
- onion, chopped
- ground cumin - 1 tsp
- dried navy beans - 1 c
- Monterey Jack cheese, shredded - 3/4 c
- can green chiles, chopped - 1 oz
- cooked chicken breasts, chopped - 2 c
- cans ready to serve chicken broth - 3 1/2
How to make white chili:
Sort and wash beans; place in a Dutch oven. Cover with water 2 inches above beans; let soak 8 hours. Drain beans and return to Dutch oven. Add broth, water, onion, garlic and salt. Bring to a boil; cover and reduce heat. Simmer 2 hours, stirring occasionally. Add chicken, green chiles, cumin, oregano, red pepper and cloves. Cover and cook 30 minutes.
