Whipped potato casserole
Ingredients/Components
- cream cheese - 8 oz
- salt and pepper - 1 item
- medium potatoes - 10 item
- or more sour cream - 1/4 c
How to make whipped potato casserole:
Peel and cook potatoes until tender. Drain and mash well. Beat cream cheese and sour cream together, add to potatoes, blending well. Add more sour cream and a little milk if potatoes are too stiff. Spoon into a 2-quart casserole and season and brush top with melted butter and sprinkle with paprika. Cover and put it in refrigerator, covered, until ready to use. Bake 40 minutes at 300°, uncovered. Serves 12 generously.Recipe categories: Side dish, Potato, Casseroles.
