Weepless meringue

Weepless meringue



  • sugar - 1/4 c
  • cornstarch - 1 Tbsp
  • water - 1/2 c
  • pinch of salt - 1 item
  • egg whites - 3 item

How to make weepless meringue:

Mix the first 4 ingredients in a small saucepan, stirring over medium heat and bring to a boil. Boil 1 or 2 minutes or until thick. Cool completely.

In a mixing bowl at high speed, beat 3 egg whites until it peaks. Gradually beat in sugar until stiff and glossy, but not dry. Spoon meringue, spreading to edge of crust to seal, then covering center of filling. Swirl with back of spoon. Bake 8 to 10 minutes at 425°.
