Watermelon sherbet
Ingredients/Components
- sugar - 1/2 c
- envelope unflavored gelatin - 1 item
- cranberry juice cocktail - 1/3 c
- cubed, seeded watermelon - 4 c
How to make watermelon sherbet:
Place watermelon cubes in blender or food processor and blend until smooth (approximately 3 cups of mixture). Stir in sugar. In a saucepan, combine gelatin and juice cocktail. Add to melon mixture. Pour into an 8 x 8 x 2-inch baking pan. Cover and freeze for 2 hours or until firm. Break up frozen mixture and place in a bowl. Beat with mixer on medium/high speed or until mixture is fluffy. Return to pan. Cover and freeze for 6 hours or until firm. Makes 8 (1/2 cup) servings.Recipe categories: Desserts, Frozen desserts, Melons.
