Watermelon rind pickles
Ingredients/Components
- sugar - 6 7
- salt - 1 c
- cold water - 1 gal
- vinegar - 2 c
- allspice - 1 Tbsp
- whole cloves - 1 Tbsp
- mustard seed - 1/4 tsp
- cinnamon sticks - 3 item
- lemon, sliced thin - 1 item
- cubed watermelon rind - 4 qt
How to make watermelon rind pickles:
Remove green and pink from watermelon. Cut into 1-inch pieces. let stand overnight in salt and water.In a large kettle prepare remaining ingredients. Drain and rinse rind. Cover with cold water and cook for 10 minutes. Tie spices in a bag. Add spices and remaining ingredients. Cook until rind pieces are transparent. Remove spices and pack in hot jars. Process 10 minutes.
