Ingredients/Components

  • sugar - 9 c
  • salt - 1 c
  • water - 1 c
  • vinegar - 3 c
  • pickling spice - 3/4 oz
  • rind of medium watermelon - 1 item

How to make watermelon rind pickles:

From one medium size watermelon, trim rind, leaving a pink edge for color. Cut the rind into small squares (1 to 1 1/4 inches). Make a brine of 1 cup salt to 1 gallon water and soak rind overnight.

In morning, put on kettle of water. Drain and wash rind in cold water. Put rind in kettle on stove and prepare syrup. While the rind is cooking, in another kettle, mix vinegar, sugar, water and pickling spice which is in a spice bag or tied in a thin square of white cloth. Rind will be tender in about 15 to 20 minutes. Do not overcook. Turn off heat under rind, but boil syrup about 15 to 20 minutes.

When syrup is ready, drain rind and place it in syrup. Boil 5 to 6 minutes. Seal in clean jars and wait 2 to 3 weeks for it to season before tasting.
