Ingredients/Components

  • water
  • salt - 2 tsp
  • long grain rice
  • pine nuts - 3/4 c
  • olive oil - 3/4 c
  • fresh lime juice - 1/4 c
  • mayonnaise - 1/2 c
  • Dijon mustard - 2 Tbsp
  • pepper - 1/2 tsp
  • fresh mushrooms, quartered - 2 c
  • medium red bell peppers, cut into cubes - 2 item
  • green onions white and green parts, sliced - 6 item
  • fresh coriander, chopped - 1/4 c

How to make warm rice salad:

Heat 2 1/2 cups water with salt in saucepan to boiling. Add rice and stir. Reduce heat to low. Cook, covered, until water is absorbed, 12 minutes. Let stand, covered, for 10 minutes.

Meanwhile, toast pine nuts in skillet over medium heat, shaking pan frequently, until golden brown, 6 minutes. Transfer to a bowl; let cool.

Make dressing. Whisk oil, lime juice, mayonnaise, mustard and pepper in small bowl. Pour half the dressing over warm rice; toss to coat. Add mushrooms, peppers, green onions and half the coriander; toss to combine. Let stand, covered, at room temperature for 1 hour.

When ready to serve, add remaining dressing, other half of coriander and the pine nuts; toss to combine. Put in a 200° oven for about 45 minutes. Use a round, low dish for the presentation. Makes 8 servings.

Preparation Time: 20 minutes, plus 1 hour to marinate.
