Waikiki meatballs
Ingredients/Components
- packed brown sugar - 1/2 c
- milk - 1/4 c
- salt
- cornstarch - 2 Tbsp
- egg - 1 item
- vinegar - 1/3 c
- shortening - 1 Tbsp
- ginger - 1/4 tsp
- soy sauce - 1 Tbsp
- chopped green pepper - 1/3 c
- ground beef
- cracker crumbs - 2/3 c
- minced onion - 1/3 c
- can pineapple tidbits, drained reserve juice - 1 item
How to make waikiki meatballs:
Combine beef, crumbs, onion, egg, salt, ginger and milk. Mix thoroughly. Shape into balls. Melt shortening in large skillet; brown and cook meatballs. Remove meatballs; place in crock-pot or casserole. Mix cornstarch and brown sugar. Stir in reserved pineapple juice, vinegar and soy sauce until smooth. Pour into skillet; cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir for 1 minute. Add pineapple and green peppers. Pour over meatballs and cook on low in crock-pot or 30 minutes in 300° oven. Serve over cooked rice.Recipe categories: Pineapple, Ground beef, Beef.
