Ingredients/Components

  • salt - 1 tsp
  • butter
  • eggs, separated - 2 item
  • hot milk - 1 c
  • grated cheese - 1/4 c
  • parsley - 1 tsp
  • mashed potatoes - 3 c

How to make volcano potatoes:

Add beaten egg yolks to mashed potatoes, then add salt, parsley and milk; mix together. Fold in stiffly beaten egg whites. Mold into cones 3-inches high and place in a shallow baking dish. Make a deep indentation in the top of each cone and fill with grated cheese sprinkled with paprika. Bake at 425° for 12 to 15 minutes.
