Vichyssoise
Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- butter - 1/4 c
- cream - 3 c
- onion, chopped - 1/4 c
- chicken stock - 1 qt
- baking potatoes - 5 item
- carrot, diced - 1 item
- leeks white part only, sliced - 4 item
How to make vichyssoise:
Saute leeks and onion in butter until yellow. Add potatoes, carrot, chicken stock and salt. Bring to a rapid boil; cover, reduce heat and simmer until potatoes and carrots are soft.
