Very berry cheesecake
Ingredients/Components
- pkg - 2 oz
- sugar - 3/4 c
- flour - 2 Tbsp
- vanilla - 2 tsp
- cream-style cottage cheese - 1 c
- blackberry, cherry or orange juice - 1/4 c
- eggs - 3 item
- red, gold or blueberries, cherries or blackberries
- blackberry brandy or orange juice - 1 Tbsp
How to make very berry cheesecake:
Use a graham cracker crust for a large pie dish.In mixing bowl, cream the cream cheese, 3/4 cup sugar, flour and vanilla with electric mixer on medium speed. Place cottage cheese in blender and process until smooth. Mix the cream cheese mixture in with the cottage cheese. Stir 1/4 cup brandy or orange juice. Add eggs, one at a time, while blending. Pour half the cheese mixture into the crust. Put 3 cups of fruit on top. Then pour rest of cheese mixture over fruit. Top cheese pie with 1/2 cup fruit. Bake at 375° for 40 to 45 minutes. Makes 6 to 8 servings.
