Vegetarian manicotti
Ingredients/Components
- large cans tomatoes - 4 item
- large onions, chopped - 5 item
- head garlic, chopped - 1 item
- sugar optional - 2 tsp
- can tomatoes optional - 1 item
- sweet basil - 2 Tbsp
- olive oil - 1/4 c
- salt to taste - 1 item
- container Ricotta - 1 lb
- to 4 boxes manicotti shells - 3 item
- container cottage cheese - 1 lb
- dried parsley - 1/4 c
- Parmesan - 1/4 c
- Romano - 1/4 c
- grated Mozzarella - 1 c
- eggs, beaten - 3 item
- sugar - 2 Tbsp
- nutmeg - 2 tsp
How to make vegetarian manicotti:
Saute onions and garlic in oil until transparent. Add tomatoes, basil and sugar (this is optional) and salt. Simmer 3 to 4 hours.Combine cheeses, parsley, eggs, sugar and nutmeg. Fill uncooked shells with cheese mixture. Place a small amount of sauce in a baking dish. Arrange shells so 1 inch of space remains between shells. Cover in sauce. Cover dish with foil; bake at 375° for 1 hour.
