Ingredients/Components

  • salt
  • pepper - 1/2 tsp
  • parsley flakes - 2 Tbsp
  • oregano - 2 tsp
  • mushrooms, sliced - 8 oz
  • olive oil - 4 Tbsp
  • medium onion, chopped fine - 1 item
  • Ricotta cheese - 12 oz
  • small zucchini, sliced - 2 item
  • spaghetti sauce - 1 qt
  • red wine - 1/2 c
  • black olives, sliced - 1 item
  • crushed basil
  • green pepper rings - 1 item
  • Parmesan or Romano cheese - 1/4 c
  • to 4 cloves garlic, minced - 2 item
  • boxes frozen spinach, thawed and drained, reserve for layers - 2 item
  • Mozzarella cheese, shredded, reserve for layers - 1 lb
  • box lasagne style noodles - 1 item
  • Vegetable Sauce:4 medium carrots, peeled and cut on bias
  • Cheese and Egg Mixture:2 medium eggs
  • cottage cheese cream style - 16 oz

How to make vegetarian lasagne:

Vegetable Sauce:4 medium carrots, peeled and cut on bias1 medium onion, chopped fine2 to 4 cloves garlic, minced2 tsp. oregano1 1/2 tsp. crushed basil4 Tbsp. olive oil1/2 c. red wine1 qt. spaghetti sauce1 1/2 tsp. salt8 oz. mushrooms, sliced2 small zucchini, sliced Cheese and Egg Mixture:2 medium eggs2 Tbsp. parsley flakes12 oz. Ricotta cheese1/4 c. Parmesan or Romano cheese1 tsp. salt1/2 tsp. pepper16 oz. cottage cheese (cream style) Vegetable Sauce: Cook (saute) carrots, onions and garlic in olive oil until onion is cooked. Stir in spaghetti sauce, wine and spices. Simmer 15 to 20 minutes, until carrots are tender, stir in mushrooms and zucchini; cook uncovered until zucchini is tender.

Cheese and Egg Mixture: Mix cheese and egg mixture ingredients until well blended.

Noodles and Preparation: Cook one box of lasagne style noodles, drain and put half in greased 13 x 9 x 2-inch pan. Top noodles with half of spinach (uncooked), half of cheese-egg mixture, half of vegetable sauce, half of Mozzarella cheese. Repeat layers, but reserve one cup of Mozzarella cheese. Bake in 375° oven for approximately 35 minutes.

Take out of oven, place thin slices or rings of green pepper and sliced black olives on top with remaining 1 cup Mozzarella cheese. Put back in oven for about 10 minutes until cheese melts. Let stand 10 minutes before serving.
