Ingredients/Components

  • chili powder - 2 Tbsp
  • clove garlic - 1 item
  • salt to taste - 1 tsp
  • bell pepper - 1 item
  • sliced carrots - 1 c
  • can whole tomatoes - 1 item
  • cumin - 1 tsp
  • fresh broccoli - 1/2 item
  • bag pinto beans - 1 lb
  • black pepper optional - 1 tsp
  • onion medium - 1 item

How to make vegetarian chili:

Soak beans for about 2 hours. Cook beans in medium size pot until tender. Chop all vegetables. Keep separate. Saute in vegetable oil the onion, bell pepper, garlic and carrots. Chop canned tomatoes a little and add to beans along with sauteed carrots, onion, bell pepper and garlic. Add chili powder, pepper, cumin and salt. Let simmer 20 minutes. Add broccoli. Serve with cornbread or spicy hot cheese cornbread and rice.
