Vegetarian chili
Ingredients/Components
- chili powder - 2 Tbsp
- clove garlic - 1 item
- salt to taste - 1 tsp
- bell pepper - 1 item
- sliced carrots - 1 c
- can whole tomatoes - 1 item
- cumin - 1 tsp
- fresh broccoli - 1/2 item
- bag pinto beans - 1 lb
- black pepper optional - 1 tsp
- onion medium - 1 item
How to make vegetarian chili:
Soak beans for about 2 hours. Cook beans in medium size pot until tender. Chop all vegetables. Keep separate. Saute in vegetable oil the onion, bell pepper, garlic and carrots. Chop canned tomatoes a little and add to beans along with sauteed carrots, onion, bell pepper and garlic. Add chili powder, pepper, cumin and salt. Let simmer 20 minutes. Add broccoli.
