Vegetarian chili
Ingredients/Components
- vegetable oil - 1 Tbsp
- medium onion, chopped - 1 item
- carrots, finely chopped - 2 item
- cloves garlic, minced - 4 item
- sweet red pepper, chopped - 1 item
- green pepper, chopped - 1 item
- jalapenos fresh or canned, finely chopped - 2 item
- chili powder - 2 Tbsp
- cumin - 1 Tbsp
- cooked kidney beans - 1 c
- cooked pinto beans - 1 c
- can tomatoes, chopped reserve juice - 1 oz
- salt - 1/8 tsp
- ground pepper - 1/2 tsp
- fresh cilantro, finely chopped - 2 Tbsp
How to make vegetarian chili:
In large soup kettle, warm oil over low heat. Add onions, carrots, garlic, peppers and jalapenos. Cover and cook vegetables until soft, 10 minutes. Remove lid; add chili powder and cumin. Cook additional 2 to 3 minutes, stirring occasionally. Add beans, tomatoes and juice. Increase heat to medium and bring chili to simmer. Adjust heat to maintain a simmer and let chili cook for 20 minutes. Stir in salt, pepper and cilantro; serve.Recipe categories: Main dish, Beans, Chili.
