Vegetable stew
Ingredients/Components
- salt - 1 tsp
- parsley, chopped - 1/4 c
- green pepper, chopped - 1/4 c
- celery, chopped - 1/2 c
- tomato puree - 2 Tbsp
- oregano dried - 1 tsp
- carrots, cubed - 1 c
- tarragon dried - 1 tsp
- fresh frozen peas - 2 c
- onion, sliced and sauteed - 1/2 c
- diced potatoes, scrubbed - 1 c
- sweet basil dried - 1 tsp
- savory dried - 1 tsp
How to make vegetable stew:
Steam first 6 ingredients in as little water as possible until carrots and potatoes are tender. Near the end of cooking, add peas, tomato puree and parsley. Steam just until peas are tender, about 3 minutes. Let stand, covered, a few minutes before serving.This stew has an excellent flavor when made as described; however it is also a good recipe for experimenting with spices. Try, at different times, adding with the salt:
