Vegetable soup
Ingredients/Components
- pepper - 1/8 tsp
- diced onion - 1/4 c
- basil leaves - 1/4 tsp
- chopped parsley - 1 tsp
- garlic cloves, minced - 2 item
- thinly sliced zucchini
- packets instant chicken broth and seasoning mix - 2 item
- each: thinly sliced carrot and chopped seeded tomato - 1/2 c
How to make vegetable soup:
Combine onion, broth mix and garlic in a nonstick saucepan; cook, stirring occasionally, until onion is translucent. Add remaining ingredients and stir to combine. Cover and cook over low heat, stirring occasionally, for about 10 minutes. Add 2 cups water and bring to a boil. Reduce heat to medium; cover and cook until vegetables are soft, about 20 minutes. Using a slotted spoon, remove about 1/2 cup vegetables from saucepan and set aside. In blender container in 2 batches, puree remaining soup. Return pureed mixture to saucepan.
