Ingredients/Components

  • butter - 1 Tbsp
  • chopped celery - 1 c
  • chili powder - 1 Tbsp
  • bay leaf - 1 item
  • ground beef - 1 1/2
  • salt and pepper to taste - 1 item
  • onion, chopped - 1 item
  • chopped parsley - 1 Tbsp
  • green pepper, chopped - 1 item
  • diced carrots - 2 c
  • diced potatoes - 2 c
  • each peas & corn - 2 c
  • soup beans cooked - 2 c
  • each tomatoes - 3 cans
  • rice or sm - 2 c

How to make vegetable soup:

Lightly brown the ground beef in butter; drain. In a large pot, add all of the ingredients except tomatoes and rice or noodles and simmer for 1 hour or until the potatoes are slightly tender. Then add the tomatoes and the rice or noodles and simmer for 30 additional minutes or until the noodles are of desired softness. Remove bay leaf and serve.
