Vegetable soup
Ingredients/Components
- cubed steak or any leftover beef - 1 pkg
- frozen mixed vegetables - 1 pkg
- frozen soup vegetables - 1 pkg
- small onion, chopped - 1 item
- chopped ham - 1/2 c
- boneless chicken, peeled shrimp or crawfish - 1 item
- can beef broth - 1 item
- potatoes, chopped - 2 c
- water - 5 c
- parsley - 1 Tbsp
- oregano - 1 tsp
- or 5 beef bouillon cubes - 4 item
- pepper - 1/2 tsp
- can tomatoes - 1 oz
How to make vegetable soup:
Brown beef if not already cooked. Add frozen vegetables and bring to a boil. Lower heat; add remaining ingredients (except tomatoes). Keep a check on the water content and add more as needed. Cook until potatoes and vegetables are tender. Add tomatoes; cook another 15 minutes. Serve with cornbread.Recipe categories: < 4 hours, Weeknight, Soups & stews.
