Ingredients/Components

  • cubed steak or any leftover beef - 1 pkg
  • frozen mixed vegetables - 1 pkg
  • frozen soup vegetables - 1 pkg
  • small onion, chopped - 1 item
  • chopped ham - 1/2 c
  • boneless chicken, peeled shrimp or crawfish - 1 item
  • can beef broth - 1 item
  • potatoes, chopped - 2 c
  • water - 5 c
  • parsley - 1 Tbsp
  • oregano - 1 tsp
  • or 5 beef bouillon cubes - 4 item
  • pepper - 1/2 tsp
  • can tomatoes - 1 oz

How to make vegetable soup:

Brown beef if not already cooked. Add frozen vegetables and bring to a boil. Lower heat; add remaining ingredients (except tomatoes). Keep a check on the water content and add more as needed. Cook until potatoes and vegetables are tender. Add tomatoes; cook another 15 minutes. Serve with cornbread.
