- cup diced red pepper - 1/4 item
- cup diced onions - 1/4 item
- cup shredded cheese - 3/4 item
- drops hot-pepper sauce - 3 item
- pkg 10-oz chopped spinach - 1 item
- - 8 eggs - 6 item
How to make vegetable quiche cups to go:
Thaw and drain spinach. I saut vegetables before mixing them with beaten eggs. Add cheese and mix well.Line a 12-cup muffin tin with foil baking cups. Spray cups with cooking spray.
Fill foil cups about 3/4 full with egg mixture. Bake at 350 degrees for 20 minutes, until knife inserted comes out clean.
These can be frozen and microwaved. They make a good, fast on the go breakfast. you can combine any vegetables and cheeses. I've used asparagus, broccoli, or just red pepper and onions - oh, and green chile!
