Vegetable quiche
Ingredients/Components
- skim milk - 1/4 c
- sliced fresh mushrooms - 3/4 c
- canola oil - 1 Tbsp
- egg substitute - 3/4 c
- cooked brown rice - 1 c
- chopped fresh broccoli
- unbaked crust - 1 item
- shredded low-fat Mozzarella cheese, divided - 3/4 c
- cooked no-yolk noodles - 1 c
How to make vegetable quiche:
In bowl, combine rice, cooked noodles, 1/4 cup egg substitute and half the cheese. Mix well. Pat into bottom and up the sides of a 9-inch pie plate coated with nonstick cooking spray; set aside. In another bowl, combine broccoli, mushrooms, milk, oil and remaining egg substitute. Pour into crust.Bake, uncovered, at 375° for 20 to 25 minutes, or until knife inserted near center comes out clean. Sprinkle with remaining cheese and return to oven until cheese melts.
