Ingredients/Components

  • oil - 3 Tbsp
  • cloves - 2 item
  • cloves garlic - 4 item
  • tomatoes, chopped - 2 item
  • turmeric - 1/2 tsp
  • bell pepper, chopped - 1 item
  • cardamom - 2 item
  • Salt to taste - 1 item
  • cups basmati rice - 2 item
  • onions, finley chopped - 3 item
  • small cauliflower, chopped - 1 item
  • cup green peas - 1 item
  • cup cabbage, chopped - 1 item
  • French beans, chopped - 2 item
  • Small piece of ginger - 1 item
  • green chilis - 4 item
  • Few cilantro leaves, chopped - 1 item

How to make vegetable pulao:

Grind together 3 cloves of garlic, 4 green chilies, and a small piece of ginger. Season oil with cardamom and cloves, add chopped onions, and fry until light brown. Add the ground spices and fry until oil separates. Add vegetables along with turmeric and coriander powder. Fry for 2 mins. Add enough water to boil veggies for 5 minutes. Half boil rice. Remove the starch from the rice and add it to the vegetables and mix well. Add a few leaves of mint and keep it on the stove over low flame for 3 mins. Serve hot with raitha.
