Ingredients/Components

  • milk - 1/2 c
  • salt - 1/4 tsp
  • vegetable oil - 2 Tbsp
  • butter or margarine, melted - 1 Tbsp
  • pepper - 1/4 tsp
  • 6 oz
  • small onion, chopped - 1 item
  • stalk celery, sliced - 1 item
  • small green pepper, chopped - 1 item
  • fine, dry breadcrumbs - 3 Tbsp
  • coarsely chopped fresh broccoli - 1 c
  • egg noodles, uncooked - 4 oz

How to make vegetable noodle casserole:

Cook noodles according to package directions; drain and set aside. Saute celery, onion, green pepper and broccoli in oil until tender. Stir in milk and next 3 ingredients. Add noodles and spoon into a lightly greased 1 1/2-quart baking dish. Cover and bake at 350° for 15 minutes. Sprinkle with breadcrumbs and drizzle with butter. Bake uncovered 10 minutes. Yield: 4 to 6 servings.
