Ingredients/Components

  • oil - 1 Tbsp
  • carrots - 2 item
  • broccoli flowerets - 1 c
  • large garlic clove - 1 item
  • medium size onion - 1 item
  • cooked vermicelli - 2 c
  • red pepper sweet - 1 item
  • Chinese oyster sauce - 2 Tbsp
  • mirin* - 1 Tbsp

How to make vegetable lo mein:

*Mirin is a sweet rice vinegar.

Cut onion into 6 to 8 wedges. Julienne the carrots and red pepper. Cut broccoli into bite size pieces.

Heat wok, then add oil. Add onions and stir-fry until tender-crisp. Add carrots, pepper, broccoli and garlic. Continue cooking 3 to 4 minutes. In a small bowl, stir together oyster sauce and mirin. Pour over vegetables; add vermicelli and toss well. Serve hot. Makes 4 servings.
