Ingredients/Components

  • pepper to taste - 1 item
  • small onion, chopped - 1 item
  • jar spaghetti sauce - 1/2 item
  • celery stalk, chopped - 1 item
  • frozen chopped broccoli - 6 8
  • garlic clove, chopped - 1 item
  • lasagne noodles - 1 item
  • salt or garlic salt - 1 item
  • frozen sliced carrots - 6 8
  • small sweet pepper, chopped - 1 item
  • frozen sliced zucchini - 6 8
  • frozen chopped cauliflower - 6 8
  • sliced cheese, Monterey Jack or Mozzarella - 1 item
  • cubed tofu if desired - 1 item

How to make vegetable lasagne:

Bring to boil in water first 5 ingredients. When noodles are done drain off water. Remove noodles to a separate container. Into vegetable mixture add next 6 ingredients, mix well with spaghetti sauce. Layer vegetable mixture in a large casserole bowl with noodles and cheese. Casserole must end with cheese on top. Bake at 375° until cheese starts to brown.
