Vegetable couscous
Ingredients/Components
- chopped tomatoes about 2 large - 2 c
- can garbanzo beans - 1 oz
- chopped red bell pepper - 1/2 c
- chopped green onions - 1/2 c
- chopped fresh oregano - 1 Tbsp
- paprika - 1 tsp
- olive oil or vegetable oil - 1 tsp
- hot cooked couscous - 5 c
- grated Parmesan cheese - 1/4 c
How to make vegetable couscous:
Heat all ingredients except couscous and cheese to boiling in a 2-quart saucepan. Serve over couscous. Sprinkle with cheese. Makes 6 servings.Recipe categories: Side dish, Beans, Chickpeas/garbanzos.
