Ingredients/Components

  • chopped tomatoes about 2 large - 2 c
  • can garbanzo beans - 1 oz
  • chopped red bell pepper - 1/2 c
  • chopped green onions - 1/2 c
  • chopped fresh oregano - 1 Tbsp
  • paprika - 1 tsp
  • olive oil or vegetable oil - 1 tsp
  • hot cooked couscous - 5 c
  • grated Parmesan cheese - 1/4 c

How to make vegetable couscous:

Heat all ingredients except couscous and cheese to boiling in a 2-quart saucepan. Serve over couscous. Sprinkle with cheese. Makes 6 servings.
