Ingredients/Components
- salt - 1/4 tsp
- cloves garlic, minced - 2 item
- chili powder - 1 tsp
- sliced zucchini - 4 c
- thinly sliced carrots
- sliced green pepper - 1 c
- chopped tomato - 2 c
- 6-inch warm flour tortillas - 15 item
- oregano - 1/2 tsp
- sliced mushrooms - 1 c
- sliced onion - 1 c
- shredded Monterey Jack cheese - 1 c
- cumin - 1/2 tsp
- cans chopped green chilies, drained - 2 oz
- chopped ripe olive - 1/4 c
- seeded minced jalapeno pepper - 1 Tbsp
How to make vegetable burritos:
Coat a Dutch oven with cooking oil spray, place on medium-high heat until hot. Add onion, mushroom and garlic. Saute until they are tender. Add remaining vegetables and peppers.
