Ingredients/Components
- salt - 1 tsp
- chili powder - 1/2 tsp
- oregano - 1/2 tsp
- mushrooms, sliced - 1/2 lb
- Jack cheese, shredded - 6 oz
- cumin - 1/2 tsp
- medium carrots, thinly sliced - 2 item
- can diced green chiles - 1 oz
- large onion, coarsely chopped - 1 item
- can sliced olives, drained - 1 item
- cloves garlic, thinly sliced - 2 item
- large green pepper, in strips - 1 item
- medium zucchini, in 1/2-inch thick slices - 4 item
- tomatoes, peeled and cut in 1/2-inch wedges - 2 item
- Cheddar or jalapeno cheese, shredded - 6 oz
How to make vegetable burritos:
Saute vegetables (onion and garlic first). Top with grated cheese and bake until bubbly. Serve with warm tortillas, salsa, sour cream and guacamole. Can put cheese on the table instead of melting on top.Recipe categories: American, Vegetables, Southwestern u.s..
