Vegetable beef soup
Ingredients/Components
- butter - 2 Tbsp
- water - 3 c
- pepper - 1/2 tsp
- bay leaf - 1 item
- can whole tomatoes, cut up undrained - 1 oz
- sliced carrots - 1 c
- sliced celery - 1/2 c
- dried thyme leaves - 1/4 tsp
- frozen whole kernel corn - 1 c
- can onion soup - 1 3/4
- frozen green beans - 1 c
- dried marjoram leaves - 1/2 tsp
- beef stew meat, cut into 3/4-inch pieces - 1 1
- potato cubes 1/2-inch cubes
How to make vegetable beef soup:
In Dutch oven, melt butter. Add stew meat. Cook and stir over medium-high heat until meat is browned. Add water, tomatoes, onion soup, pepper, marjoram, thyme and bay leaf. Heat to boiling. Reduce heat; cover and simmer for 1 hour. Add potatoes, carrots and celery. Cover and simmer 40 to 50 minutes or until vegetables are tender, stirring occasionally. Add corn and green beans.
