Vegetable beef soup
Ingredients/Components
- potatoes - 2 lb
- large onion, chopped - 1 item
- can corn - 1 oz
- can green beans - 1 oz
- can tomato puree - 1 oz
- can peas - 1 oz
- can wax beans - 1 oz
- lean beef - 1/2 lb
- can carrots - 1 oz
- seasoning packet from Ramen noodles - 1/2 item
- or 4 ribs celery - 3 item
How to make vegetable beef soup:
Cut beef into small pieces, removing fat. Put into 6 quart soup pot. Wash and dice potatoes (do not peel). Add potatoes, onion, chopped celery and corn to soup pot. Boil 1/2 to 3/4 hour. Add remaining ingredients, stir well. Simmer 1/2 hour.May be served at once, but better if allowed to cool overnight, then reheated. Stir before serving.
