Ingredients/Components

  • potatoes - 2 lb
  • large onion, chopped - 1 item
  • can corn - 1 oz
  • can green beans - 1 oz
  • can tomato puree - 1 oz
  • can peas - 1 oz
  • can wax beans - 1 oz
  • lean beef - 1/2 lb
  • can carrots - 1 oz
  • seasoning packet from Ramen noodles - 1/2 item
  • or 4 ribs celery - 3 item

How to make vegetable beef soup:

Cut beef into small pieces, removing fat. Put into 6 quart soup pot. Wash and dice potatoes (do not peel). Add potatoes, onion, chopped celery and corn to soup pot. Boil 1/2 to 3/4 hour. Add remaining ingredients, stir well. Simmer 1/2 hour.

May be served at once, but better if allowed to cool overnight, then reheated. Stir before serving.
