Ingredients/Components

  • milk - 2 c
  • salt
  • flour - 1/4 c
  • boiling water - 2 c
  • margarine - 1/3 c
  • pepper - 1/4 tsp
  • chopped onion - 1/4 c
  • shredded sharp Cheddar cheese
  • sliced carrots - 1/2 c
  • sliced celery - 1/2 c
  • diced potatoes - 2 c
  • slices bacon, crisp and crumbled - 8 item

How to make varsity chowder:

Mix potatoes, carrots, celery, onion and salt and pepper in a saucepan; add boiling water. Cover and simmer 20 to 30 minutes or until vegetables are tender; do not drain.

Melt butter in a saucepan and stir in flour. Slowly stir in milk. Cook and stir until thick and bubbling. Stir in cheese, stirring until cheese is melted. Add to vegetables. Sprinkle with bacon. Heat thoroughly. Serves 6 to 8.
