Upside down ham loaf



  • eggs - 2 item
  • milk - 1 c
  • salt - 1/2 tsp
  • brown sugar - 3/4 c
  • vinegar - 1/4 c
  • dry mustard - 1 tsp
  • pineapple slices - 4 item
  • lean ground pork
  • crackers or bread crumbs - 1 c
  • ground smoked ham, cooked or uncooked - 2 c

How to make upside down ham loaf:

Mix brown sugar, dry mustard and vinegar. Pour into bottom of large greased loaf pan or 2-quart Pyrex dish. Place pineapple rings on top. Mix first 7 ingredients well and pack meat mixture on top of pineapple rings. Bake 1 1/2 hours at 375°. Invert on platter.
