Ingredients/Components

  • salt - 1/4 tsp
  • vegetable oil - 1 tsp
  • chicken broth - 1 c
  • sliced zucchini - 1 c
  • sliced mushrooms - 1 c
  • ground pepper - 1/2 tsp
  • cumin seeds - 2 tsp
  • chopped garlic - 1/2 tsp
  • sliced carrot - 1 c
  • frozen green peas - 1 c
  • cooked diced turkey - 1 c
  • potatoes, quartered and sliced - 2 item
  • cut up drained canned tomatoes

How to make turkey vegetable soup:

Heat oil in large soup kettle. Add zucchini, mushrooms and garlic. Cook 5 minutes over medium-high heat. Add turkey, potatoes, carrots, peas, tomatoes, broth, cumin, salt and pepper. Bring to a boil, then lower heat and simmer, covered, 20 minutes or until potatoes and carrots are tender.
