Ingredients/Components

  • flour - 4 Tbsp
  • nutmeg - 1/8 tsp
  • heavy cream - 1 c
  • grated Parmesan cheese - 3/4 c
  • chicken broth - 2 c
  • bread crumbs - 1/4 c
  • olive oil - 3 Tbsp
  • dry sherry - 2 Tbsp
  • cooked turkey, cubed - 3 c
  • Parkay - 6 Tbsp
  • pasta, cooked - 1/2 lb
  • fresh mushrooms, cleaned and sliced - 1/2 lb

How to make turkey tetrazzini:

Heat butter and oil in large saucepan. Add mushrooms. Remove with slotted spoon; set aside. Then add flour; form roux (gravy). Slowly add chicken broth; cook until thickened. Remove from heat. Add cream, sherry, nutmeg and Parmesan cheese. Stir until cheese melts. Add turkey and mushrooms. Stir well. Combine with cooked pasta. Put into greased 13 x 9-inch baking dish. Top with bread crumbs; sprinkle paprika. Bake at 350° for 25 to 30 minutes.
