Turkey rice soup
Ingredients/Components
- half and half - 1 c
- salt - 1/2 tsp
- flour - 1/2 1
- margarine - 1/2 c
- dash of pepper - 1 item
- large onion, diced - 1 item
- green pepper, diced - 1/2 item
- chopped fresh mushrooms - 1 c
- vermouth optional - 2 3
- 1/2 ribs celery, diced - 1 item
- hot chicken or turkey - 8 c
- broth plus meat - 1 item
- cooked rice or 1/2 c - 2 c
How to make turkey rice soup:
Melt butter in large kettle over medium heat. Saute onion, pepper, celery and mushrooms until tender-crisp. Stir in flour. Do not brown. Slowly add broth. Cook and stir over medium heat until thickened. Cook 1 minute longer. Stir in rice and half and half. Heat to serving temperature. Blend in salt, pepper and vermouth. (Good way to use up last of Thanksgiving turkey.) I boil up all the bones and make my broth, plus the meat.Recipe categories: Soups & stews, Clear soup, Stocks.
