Turkey fajitas
Ingredients/Components
- ground cumin - 1/4 tsp
- dried oregano - 1/2 tsp
- lime or lemon juice - 3 Tbsp
- each - 4 flour
- small onion, sliced - 1 item
- large garlic clove, minced - 1 item
- picante sauce or salsa - 1/4 c
- coarsely shredded Cheddar cheese - 4 oz
- cooked turkey breast, cut in strips - 8 oz
- medium red or green bell pepper, cut into strips - 1 item
How to make turkey fajitas:
In medium bowl, combine turkey strips, lime juice, garlic, oregano and cumin. Let stand, covered, for 1 hour to blend flavors. Spray a medium nonstick skillet with nonstick cooking spray. Saute onion and bell pepper until tender. Add turkey to skillet; cook until heated through, about 3 minutes. In preheated toaster oven or microwave oven, heat tortillas, following label directions. Spoon 1/4 of the turkey mixture onto each tortilla; top each with 1 ounce cheese and 1 tablespoon picante sauce. Fold tortilla over filling.
