Ingredients/Components

  • egg whites - 3 item
  • plus 1 Tbsp - 1/4 c
  • lemon juice - 1 Tbsp
  • pepper - 1/4 tsp
  • chopped celery - 1/2 c
  • soy sauce - 2 tsp
  • Parmesan cheese - 3 Tbsp
  • parsley flakes - 1 Tbsp
  • cooked brown rice - 2 c
  • can tuna in water, drained and flaked - 1 oz
  • heaping low-fat yogurt - 5 Tbsp

How to make tuna muffins:

Preheat oven to 375°. Combine and mix together all ingredients except egg whites. Beat egg whites until stiff; fold into other mixture. Spray muffin tins with Pam and fill tins into a mound shape. Bake 35 to 40 minutes or until golden brown. Run a knife around each muffin to loosen.
