Tuna muffins
Ingredients/Components
- egg whites - 3 item
- plus 1 Tbsp - 1/4 c
- lemon juice - 1 Tbsp
- pepper - 1/4 tsp
- chopped celery - 1/2 c
- soy sauce - 2 tsp
- Parmesan cheese - 3 Tbsp
- parsley flakes - 1 Tbsp
- cooked brown rice - 2 c
- can tuna in water, drained and flaked - 1 oz
- heaping low-fat yogurt - 5 Tbsp
How to make tuna muffins:
Preheat oven to 375°. Combine and mix together all ingredients except egg whites. Beat egg whites until stiff; fold into other mixture. Spray muffin tins with Pam and fill tins into a mound shape. Bake 35 to 40 minutes or until golden brown. Run a knife around each muffin to loosen.Recipe categories: Lunch/snacks, Side dish, Main dish.
