Ingredients/Components

  • butter - 1/2 c
  • cooking oil - 6 Tbsp
  • lemon juice - 3 Tbsp
  • chopped parsley - 4 Tbsp
  • chopped chives - 1 Tbsp
  • chopped mushrooms - 1/2 c
  • brook trout, prepared for cooking - 4 item
  • flour, seasoned with salt, pepper and pinch of thyme - 3/4 c
  • lemon slices, dipped in paprika - 8 item

How to make trout meuniere:

Roll trout in seasoned flour. Heat oil in frypan and add trout which should be gently cooked and browned on both sides. When thoroughly cooked, transfer trout to heated serving platter and keep hot.

While fish is cooking, brown butter in saucepan; add chopped mushrooms and saute for about 5 minutes. Add lemon juice, chopped parsley, chives and dash of salt. Heat thoroughly and pour over trout. Decorate with lemon slices.
