  • cream cheese - 1 lb
  • sour cream - 1 c
  • brown sugar - 2 Tbsp
  • melted margarine - 1/4 c
  • can sweetened condensed milk - 14 oz
  • finely chopped nuts - 1/2 c
  • whole eggs - 2/3 c
  • frozen orange juice - 1/3 c
  • drained, crushed pineapple - 1 c
  • graham crumbs - 1 c
  • toasted flaked coconut - 3/4 c
  • pineapple sundae topping - 1 c

How to make tropical cheesecake:

Combine coconut, nuts, sugar and margarine with graham crumbs. Press crumb mixture on bottom and halfway up sides of 9-inch spring-form pan. Beat cream cheese until fluffy. Gradually add sweetened condensed milk, beating until smooth. Add orange juice concentrate and pineapple. Mix well. Add eggs and mix well. Pour mixture into prepared pan. Bake 55 to 60 minutes at 350° or until center is set. Spread sour cream on top of hot cheesecake. Cool; chill. Top with pineapple topping. Refrigerate unused portions.
